Honduras No. 04 is a single-origin, fully washed and sun-dried coffee from the CAFESCOR cooperative in Corquin, Copan, Honduras, grown at 1,400 to 1,600 meters (4,590 to 5,250 feet) and roasted to order at a medium-dark roast level.
- Origin: Honduras, Copan (Casitas District, town of Corquin). Cafes Especiales Corquin (CAFESCOR), founded in 2014 by 25 small-scale producers and now more than 131 partners farming over 400 hectares (990 acres), with a wet mill in Las Casitas and a dry mill in Jimilile.
- Elevation: 1,400 to 1,600 meters (4,590 to 5,250 feet) above sea level
- Process: Fully washed, sun dried
- Varietals: Caturra, Red and Yellow Catuai, Bourbon, Lempira
- Roast level: Medium-dark
- Cupping notes: Caramel, spice, and brown sugar. Full-bodied.

The picture shows all three coffees are organic when I ordered. When I received my 3 coffees, only 2 were organic. I think it was the expresso.
It is a smooth coffee and not too strong. It is good for a morning brew.
I always strive to purchase coffee from pro-life places, places that understand that the life's given to us by God is a gift, and one to be nurtured. When we have our priorities straight, that bis focused on God, everything else eventually falls in line.
Just like the flavors of this coffee. I have experimented with different temperature brews to see how the extraction fairs. 86-90⁰C is the best range yet for the most balanced extraction. The lower temps in the 68-74⁰C seems to have a more caramel brown sugar note, and not much of the spice. I am curious if a long extraction cold brew will pull the spice flavor of the star anise.

The Honduras #4 is good. The roast has the promised notes it advertises and your delivery timing was spot on. I do drink many different quality brands of coffee, so my critique is based upon drinking some of the highest quality roasts in the U.S. With that said... there is some room to improve your roast. I recommend your roaster sample some of Goldenstate Coffee's blends. They are located in Placentia Ca. (not to far from your Temecula roaster) I only present this idea because your current roast quality is slightly higher priced for its coffee lover satisfaction. However if you can capture a better roasting process with the bean you have... your higher end pricing will be a perfect marriage for your customer. Goldenstate Coffee roast technique is a solid example of this business strategy. Thank you.

Honestly, I don't drink nor like coffee but I'm reviewing based off of my mom's words. I bought it for her. I had previously bought her a smaller bag. When I spoke to her about UT she said she loved it and was almost done with it. So I decided to buy her a the next size up.
