Bright, sweet, and beautifully balanced, our February Coffee of the Month comes from the highlands of Apaneca, El Salvador. This honey-processed lot delivers lively citrus notes of lemonade layered with praline sweetness and a smooth, approachable finish.
In the honey process, freshly harvested cherries are pulped but not fully washed, leaving a layer of sticky fruit mucilage on the beans as they dry. This careful balance between washed and natural processing enhances sweetness while preserving clarity, creating a cup that’s both vibrant and smooth.

About:
Cerro Las Ranas, or “Hill of Frogs,” is named after the lagoon on the farm that’s home to thousands of frogs. This coffee is produced by JASAL, a family-run operation led by Jose Antonio Salaverria and his sons, who oversee every step from farm management to cupping. Their pulped natural process involves drying the beans with their mucilage intact on clay patios, carefully turning them to ensure even drying and optimal flavor development.
