Deep in the mist-shrouded highlands of South Sulawesi, where thousand-foot rock walls rise from humid rice paddies and peaks stay wrapped in perpetual cloud, the Torajan people have farmed coffee for generations. This month, that coffee is yours. Sulawesi Toraja grows at elevations reaching 2,000 meters above sea level, in conditions that produce a cup as distinctive as the landscape: full-bodied, uncommonly smooth, and low in acid from the very first sip.
The producers behind this coffee are smallholders, with farms averaging just a few acres, organized through the Cooperative of Toraja Coffee Growers. They have been building community micro-mills that give them greater control over quality and traceability. Cherries are hand-sorted, depulped, fermented overnight, and washed before entering a step unique to Indonesian coffee tradition: Giling Basah, or wet hulling. Rather than waiting for the bean to dry fully inside its parchment, the parchment is stripped while moisture is still high, leaving the exposed green bean to finish drying on open sun patios. This counterintuitive method produces an unmistakably Indonesian cup: dense body, low brightness, and the hallmark vanilla-and-dark-chocolate depth that makes this origin unlike anything from Africa or Latin America. Regional exporter Indokom provides direct-trade logistics, which means farmers earn more and quality stays traceable from harvest to export.
In the cup: vanilla, dark chocolate, and a bright citrus note that keeps things lively. A coffee that rewards slow mornings and second pours.
